Ingredients

  • 1 egg
  • 1 chicken breast from rotisserie chicken
  • 1 avocado
  • 1/4 cup mayo
  • 1/2 orange bell pepper (sub for celery)
  • 1 T salted and roasted pepitas (sub for walnuts)
  • 1/2 T everything bagel seasoning (or sesame seeds + poppy seeds)
  • 1/2 t salt
  • 1/2 t pepper

Directions

  1. Hard-boil the egg. Start egg(s) in a pot of cold water an inch above the eggs. Put on med-high until water boils. Turn off the heat, cover, and let sit for 8-10 minutes. Put eggs into an ice bath, peel when cold.
  2. Chop chicken, avocado, and hard-boiled egg into small chunks. Chop bell pepper into tiny chunks.
  3. Combine everything, spread over toast or wrap in lettuce.
