Ingredients
- 1 egg
- 1 chicken breast from rotisserie chicken
- 1 avocado
- 1/4 cup mayo
- 1/2 orange bell pepper (sub for celery)
- 1 T salted and roasted pepitas (sub for walnuts)
- 1/2 T everything bagel seasoning (or sesame seeds + poppy seeds)
- 1/2 t salt
- 1/2 t pepper
Directions
- Hard-boil the egg. Start egg(s) in a pot of cold water an inch above the eggs. Put on med-high until water boils. Turn off the heat, cover, and let sit for 8-10 minutes. Put eggs into an ice bath, peel when cold.
- Chop chicken, avocado, and hard-boiled egg into small chunks. Chop bell pepper into tiny chunks.
- Combine everything, spread over toast or wrap in lettuce.
